These truffles are made with Dr.Coy’s Nutritional Chocolate and are as guilt free as chocolate could possibly be. Beautifully creamy, not overly sweet and contrasted with the sharpness of raspberry powder. Mmmmm…
Ingredients:
- 3 bars of Dr.Coy’s Nutritional Chocolate of your choice – we used Coconut
- 1 heaped tbsp of Dr.Coy’s Coconut Oil
- 50ml of coconut cream
- freeze dried raspberries (available at Avoca stores)
Method:
In a bain-marie melt the chocolate, coconut oil and coconut cream. Mix well and chill in the fridge until the mixture is solid. Blitz some freeze dried raspberries into powder and pour on a flat surface/plate. Using a melon baller scoop out a ball of the chocolate mixture and roll in the raspberry powder. Voila! You can coat the truffles in cocoa powder, coconut flakes, chopped pistachios or anything else you can think of but the raspberry powder makes them truly amazing 😉
