Paleo Gingerbread Cookies
Paleo gingerbread cookies made with Coconut Flour, Coconut Oil, Stevia Erylite and gingerbread spices. These are easy to make and you can get your kids involved in cutting shapes + your house will smell amazing
Ingredients:
- 250g ground almonds
- 100g coconut flour
- 15g tapioca flour
- 1/2 tsp sea salt
- 1 tsp baking soda
- 1/2 tsp ground cloves
- 1/2 tsp nutmeg
- 2 tsp cinnamon
- 2 tsp freshly ground ginger
- 150g coconut oil , melted
- 1 tsp vanilla extract
- 2 eggs
- 3 tablsp Stevia Erylite
- 2 tablsp blackstrap molasses
Method:

Combine together all of the dry ingredients.

Add the oil, eggs, molasses and vanilla and mix until combined.

Place the bowl with the dough in the fridge for 20-30 minutes so that the dough is easier to roll out.

Preheat the oven to 180°C and line 2 cookie sheets with baking parchment. After letting the dough set in the fridge, roll it out between two sheets of baking parchment and cut out shapes with your cookie cutters. Transfer the cut out cookie shapes to the lined baking sheet and bake for about 8-10 minutes. Make sure to rotate the cookie sheet half way through if your oven has hot spots.

Let the cookies cool completely before so moving from the baking sheet.
